Minestrone with pesto
Instructions
Please go to boil water and put the beans that you cook quite a bit; Add the Eggplant cut into cubes, green beans, potatoes into wedges, a black cabbage cut into pieces a little green Zucchini and yellow squash, tomatoes, dried mushrooms found in water and oil.
When the ingredients stand to reach the point of baking, place the rice.
Before scodellare add a good amount of pesto.
All served very hot.
This dish is also good cold and can be enjoyed even a few days later.

- 150 g of beans
- 3 eggplant
- 100 g of green beans
- 3 potatoes
- 1 black cabbage
- 100 g of green zucchini
- 50 g of yellow squash
- 4 tomatoes
- 30 g of fresh mushrooms
- Olive oil
- Rice
- 150 g of genoese pesto
