Chicken Soup (Minestra di Pollo)
Instructions
Cook the rice for 18 minutes with 3 cups of salted water.
Meanwhile, chop the meat, peeled and cut into small dice all vegetables except tomatoes, causing them to soften in boiling water for 6 minutes.
Next, mix the meat with the vegetables and extend the cooking broth with hot water and simmer for 15 minutes.
Peel the tomatoes and mash.
Served by a soup tureen, before rice, crushed tomatoes, chopped parsley and pour over the soup.
