Barley cream soup
Instructions
Brown the onion in the butter, sprinkle with flour and just toast.
Dissolve in warm water extract of meat and add to the sauce.
Combine the barley, stir and cook for 2 hours.
Pass all, combine the beaten egg yolk with the cream and the Parmesan cheese.
Add the pepper and serve with croutons.
Ingredients and dosing for 4 persons
- 40 g of butter
- 2 tablespoons of flour
- 150 g of pearl barley already soaked
- 1 teaspoon of meat extract
- == 1 small onion, chopped
- 1 egg yolk
- 2 tablespoons of parmigiano
- 150 cl of water
- 3 tablespoons of cream
- Pepper
- Salt
- Fried bread croutons
