Beat the eggs and add a tablespoon of water, salt and a pinch of nutmeg.
Prepared many thin pancakes friggerete butter (very little), then lay them on absorbent paper.
Once cooled, roll them up and cut them into thin strips.
When the broth boils, add the noodles and serve immediately with plenty of grated Parmesan.
