Bean soup
Instructions
The night before preparing (or at least 5 hours before), soak the beans.
Pour the beans in boiling salted water and cook them.
When cooked, keep their water.
In a soup pot, put 3 tablespoons of oil, when it is hot add flour and Brown it until it becomes a bit dark (but not too much, otherwise buy a bitter taste).
Then add the water retained by the cooking of beans and half the cooked beans before passing them to the screen.
Make sure the soup is salty enough, otherwise add some vegetable nut.
The soup should be dark and dense enough.
When it boils, add the pasta (durum wheat flour and of medium size, how ditaloni).

- 300 g of shelled dry beans
- 3 tablespoons of white flour
- 3 tablespoons of olive oil extra virgin
- 200 g of hard wheat pasta
