Artichoke soup
Instructions
Fry the chopped onion in butter, add chopped artichokes, add the broth and cook for 1/2 hour.
Add the rice and cook for another 20 minutes.
In a bowl mix the egg yolks with half the grated cheese.
When cooked, pour the soup on eggs and sprinkle with rest of cheese.
Ingredients and dosing for 4 persons
- 1 pack of artichokes findus
- 300 g of rice
- 3 eggs
- 200 cl of meat broth (or bouillon broth)
- 60 g of butter
- 60 g of parmigiano
- 1/2 onion
- Salt
