Instructions
Peel the potatoes, cut them into cubes, slice the onion thinly and let it simmer in a saucepan with the butter.
When the onion has become transparent and the potatoes have softened, sprinkle with oregano, salt and pepper.
Let season ten minutes.
Pour the boiling broth and continue cooking at low heat for about an hour; potatoes, in the end, must be nearly undone.
A few minutes before removing from heat, add chopped basil leaves and a tablespoon of chopped parsley.
