Hake in anchovy Sauce
Instructions
Salt and pepper the pieces of cod.
In a large skillet heat the oil and a knob of butter; saucepan, heat the slices of cod by placing them in seasoning, leaning on the side of the skin.
After approximately 6 minutes turn them over and finish cooking them in other 5 minutes.
Just remove them and keep them ready in hot; put in their cooking still a knob of butter, garlic, sprigs of chopped tarragon and wine.
Please take the boil, add the anchovy fillets, rinsed salt and crushing them with a fork, stemperateli in sauce that you finish with cream.
Let thicken slightly filtered the sauce and then, well, bind them with a piece of fresh butter fish slices Served on a thin layer of sauce with boiled potatoes, or other seasonal vegetables steamed.
Ingredients and dosing for 4 persons
- 600 g of cod (from 150 g slices each)
- 150 g of cream
- 4 salted anchovy fillets
- 3 sprigs of tarragon
- 1 clove of garlic
- 3 tablespoons of dry white wine
- 50 g of butter
- 3 tablespoons of olive oil
- Salt
- Pepper
