Curried cod
Instructions
Immerse the whole cod or trance salt in cold water and lessatelo for 15 minutes.
Drain them and keep it warm.
Prepare the sauce: cut the onion into thin slices and let it dry in a pan with a tablespoon of olive oil, add a ladle of broth, sprinkle with a teaspoon of curry powder and a pinch of Saffron, simmer for 2 minutes.
Beat the egg yolk with 2 tablespoons of broth, pour into saucepan, thicken.
Add salt and pepper.
Serve with the sauce accompanying Wine: Colli Orientali Del Friuli Sauvignon DOC, Montecarlo Bianco DOC, Sauvignon DOC Castel Del Monte.
