Meringue
Instructions
Doses for 20 meringues.
Whip egg whites until stiff and gently add the icing sugar sifted.
Put a little egg mounted on a canvas pastry pocket and, squeezing, high disk formed just over an inch by deploying them on the plate of the oven slightly buttered and floured.
Preheat oven to 150 degrees, reduce heat to low and continue cooking, without color, for 30-40 minutes.
The meringues should not cook, but only dry.
