Stuffed eggplant (2)
Instructions
Open in 2 parts the aubergines and svuotatele.
Inside they put a pinch of salt and a little oil.
Chop the Eggplant flesh.
In a pot put 1/4 cup of olive oil, chopped onion, a clove of crushed garlic and saute; then add the ground beef, salt, pepper, a pinch of Saffron, basil, chopped the Eggplant flesh and a little water.
Simmer for 10 minutes.
With this compound fill the eggplants and place them in a baking dish with olive oil and simmer for 1 hour.
Meanwhile prepare a tomato sauce with the tomatoes, 4 you previously boiled and passed, a little olive oil, salt and basil.
When all is ready pour this sauce over the Eggplant and posateci over a black olive stoned.
