Prawns with rocket
Instructions
Wash and dry the arugula, arrange on bottom of serving dish.
Shell the prawns, remove the dark part, remove the flesh and keep aside the coral.
Put the pulp into steamer basket, place it on the fire to moderate heat and cook for 4 minutes.
Meanwhile, squeeze the lemon, strain the juice to the colander and then emulsionatelo with oil and a pinch of salt by beating the mixture with a small whip.
Then place the crustaceans on a bed of rocket salad, garnish with the coral and over pour flush with the lemon sauce.
Serve the shrimp still warm.
Accompanying wines: Gavi DOC Grave Del Friuli Pinot Blanc ' superior ' DOC, Vermentino Di Sardegna DOC.

- 10 cl of olive oil
- 1 lemon
