Salt cod with eggs
Instructions
Let the cod for a couple of hours under running water, then lessatelo for 10 minutes in unsalted water.
When it's cold, reduce it into pieces, taking care to remove all skin and bones.
Peel the potatoes and cut them into dice.
Boil for 10 minutes in salted water and drain.
In a pan, fry the chopped onion with 5 tablespoons of olive oil and, when it is dried, join the pieces of cod.
Let everything take flavor for a few minutes, then add the tomatoes, peppers and chopped garlic.
Cover the Pan and simmer for 20 minutes, then add the potatoes, shredded coriander and, if necessary, a pinch of salt.
Continue cooking for another 10 minutes, then turn off the heat and let cool.
Beat the eggs and the contents of the Pan when done.
Grease with oil remained a baking dish and pour in the mixture.
Cook in the oven already warm to 180 degrees for 30 minutes until the surface will become Golden.
Serve the pie warm or lukewarm.
