Instructions
Put in a casserole a few spoonful of oil and thinly sliced onions.
Bring the pot on the fire and when the onions are wilted add the peppers deprived of core and seeds and cut into thin strips, chopped celery and tomatoes without skin or seeds.
Season with salt and cook to vivacious fire for half an hour.
After this time, pour into the saucepan a pint of boiling water and boil for five minutes.
Then add beaten eggs and seasoned with a pinch of salt and plenty of grated Parmesan.
