Maltese mayonnaise
Instructions
Prepare the mayonnaise, but without adding lemon juice or vinegar.
Peel oranges and cut the skin (avoid white skin underneath that has a bitter taste).
In a saucepan bring to a boil some water and soak the skin for a minute.
Let it cool under running water, finely chop finely and add to the mayonnaise.
Squeeze the orange juice, filtered to the colander and, stirring constantly, let it absorb the sauce.
Add salt if necessary.
