Maccu
Instructions
' Maccu ' (Latin for ' Santa Caterina ') derives from an ancient dish of shelled beans just cooked in water and pounded.
Put to soak the beans overnight, let them boil covered with water, drain and pass through a vegetable mill.

Before serving, season with olive oil, grated pecorino and plenty of ground black pepper coarsely.
