Snails to third place
Instructions
Purge the snails.
Saute the onion in oil, add chopped parsley, basil, marjoram, celery, tomato into small pieces.
Saute and add the snails; season with salt and pepper.
When the tomato is flabby cover of white wine.
Cook covered over low heat for 3 hours.
Crush the kernels of nuts, hazelnuts, capers and pecorino cream and reduce.
Dilute with soup, pour on snails and cook for 2 minutes.
