Traditionally eaten with bread Arabic (shami) directly with your hands.

After punzecchiato the eggplants with a fork, put them in a hot oven.

When the skin is wrinkled (after about 45 minutes) remove from the oven and peel them.

Liquidize the pulp with a little garlic (or crush with a fork), add Tahini, lemon juice and salt.

Garnish with the parsley.
