Lettuce Cream (Lattuga Alla Crema)
Instructions
Discard tougher leaves of lettuce and cut them into four.
Raccoglietele in a saucepan with the cream and butter, simmer fresh flame until they are almost unmade.
If necessary, during cooking, add some hot soup ladle.
When the liquid is almost completely evaporated, withdrawn, sprinkle Parmesan cheese, add salt, pepper and stir.
Served this delicate outline with a roasted calf.

- 50 g of butter
- 40 g of parmigiano
- 1 glass of cooking cream
