The lagana are fresh noodles.

Prepare a batter with flour, eggs, oil and salt.

Tugs of not too thin sheets and cut them into strips by a couple of inches wide.

Well open them on a tablecloth covered with flour and let them dry out a bit.

Boil in lightly salted water, drain, pour into a bowl and season to taste.

You can drizzle with the sauce with cream, with pesto.
