Instructions
Mix the flour with a pinch of yeast dissolved in lukewarm water.
Work the mixture by hand or machine as you would for making bread until you get a soft and homogeneous consistency.
Add more water if necessary.
Leave to rise.
Boil water in a pot, as the noodles.
When boiling, do small butterflies and knock them into the water, a little at a time so as not to make them stick to each other.
Drain after about ten minutes and seasoning them with sauce and good cheese.
