Instructions
Season the chicken pieces with salt and pepper.
Melt the butter with the oil in a pan large enough and equipped with lid.
Let them fry the chicken on medium heat from all sides.
Just the chicken it darkens slightly move it all on one side of the Pan, where you will put the shallots (or onion) finely chopped and sliced mushrooms or into quarters.
You blast for about 5 minutes until they become golden brown, taking care not to burn the onions, which could make bitter the flesh.
Add the finely chopped garlic and a pinch of sugar.
Cook for 1 minute, stirring constantly.
Ensure that while cooking the meat not to darken too much, to this end, continue to turn the chicken.
Add carrots and sprinkle flour and vegetables.
Pour the broth to dissolve any lumps of flour.
Mix the chicken pieces in the mixture and add the thyme and Bay leaves.
Add the beer and cook it over medium heat for about 30 minutes, until the chicken is nearly cooked and tender and stir every now and then.
Remove the lid and cook for a further 10 minutes to reduce the sauce by about a third.
Serve chicken sprinkled with chopped parsley.
