2 Cook the lobster in salted boiling water for about 30 minutes, then drain and leave to cool. Remove the tail from the lobster, extract the meaty part and cut it into rings more or less subtle, using the same way to the claws. Place the lobster meat in a dish with tomatoes cut into wedges and sliced onion very fine. Cut the longest part head: lobster inside the creamy part, putting it in a bowl. Prepare a Lemongrass sauce with salt, pepper, lemon and olive oil, adding the creamy part that was obtained from capotorace and lobster season the dish with this sauce.
