Citrus chicken salad
Instructions
Put in a saucepan the carrot and onion Peel and stick of celery washed.
Add a teaspoon of salt and about a liter of water.
Bring to the boil and plunge the whole chicken breast.
Simmer over low heat for 45 minutes, then let cool.
Wash and dry the lettuce and place them in a serving dish.
Peel the Orange and grapefruit.
Spread the slices on salad.
Citrus juice mixed with olive oil, salt and pepper.
Cut the chicken into small pieces and divide it on salad.
Garnish with slices of onion, seasoned with sauce.

- 1 pink grapefruit
- 1 orange
- 1 scallion
- 2 tablespoons of olive oil extra virgin
