Leek salad (4)
Instructions
Clean the leeks and boil them in salted water with sugar and 1 cup of vinegar.
Not too tender, drain and slice.
Place in a salad bowl.
Prepare a vinaigrette emulsifying 3 tablespoons oil with 1 tablespoon and 1/2 of wine vinegar, 1 pinch of salt and a little pepper.
Pour the sauce over leeks and serve them warm.

- 4 large leeks
- Wine vinegar
- 1 tablespoon of sugar
- 3 tablespoons of olive oil
- Salt
- Little of pepper
