Porcini salad chive
Instructions
Clean the mushrooms well.
Cut them into fine slices, arrange the slices on the plates.
In the Middle put the Frisee Salad and Arugula, washed, sliced and drizzled over them and the remaining mushrooms sliced and diced tomato.
Sprinkle the whole chives.
Those who wish to dress the salad to cold will have to put in the mixer oil and vinegar with salt and white pepper and mix everything.
To serve the salad with warm dressing proceed as follows: put the vegetable broth and white wine in a saucepan; bring to a boil and let it reduce almost completely.
Remove from heat and start putting the sauce by incorporating the oil flush as you proceed normally to make a mayonnaise, add a few drops of garlic oil or truffles, chives, season with salt and white pepper to reel.
Dress the salad and serve.

- 5 cl of red wine vinegar

- 5 cl of white wine
- 5 cl of vegetable broth
- 10 cl of olive oil extra virgin
- Few drops of garlic oil (or truffle oil)
