Tomato and cucumber salad
Instructions
Choose cucumbers with not too thick Peel, wash them with a toothbrush and slice them up.
Put them to drain, spread on a plate or on an inclined sieve.
Chop the parsley and tarragon and cut the onion into rings.
Wash the tomatoes and slice them up; put them at the center of a plate with around cucumbers.
Sprinkle the tomatoes with the onion rings and the chopped aromatic.
Dressed with a sauce emulsifying oil prepared with vinegar and salt and garnish with basil leaves and capers.
Ingredients and dosing for 4 persons
- 4 not overripe tomatoes
- 2 cucumbers
- 2 tablespoons of pickled capers
- 1 onion
- 1 sprig of parsley
- 1 sprig of basil
- Some leaves of tarragon
- 1 tablespoon of wine vinegar
- 4 tablespoons of olive oil extra virgin
- Salt
