Instructions

Boil the asparagus for about 5 minutes.

Cut the Green and tender and cut into small pieces, sliced the onions.

In a saucepan melt the butter, then add the asparagus tips and onion slices, adding 1 tbsp of water or broth and cook for 20 minutes.

When the asparagus are cooked, and away from the fire, add the sauce obtained, slamming an egg yolk with the cream and heat again for a few minutes.
