Asparagus in sauce
Instructions
Boil the asparagus in salted water.
Put in a saucepan 1/2 glass of water with 1/4 nut; Add salt, pepper and then simmer until the broth will reduce to 3 tablespoons.
Put the egg yolks into a pan with lemon juice and warm broth and whisk.
Put in double boiler and whisk until the mixture is creamy.
Remove from heat and stir in the melted butter.
Season the asparagus with sauce and paprika.

- 1 lemon
- Paprika
