Clean the asparagus, cut the stem, wash them, tie in bunches and cook in salted water, taking care that the water does not cover the tips.
In a pan heat a tablespoon oil, add eggs and beat them quickly with a fork, add salt and pepper; Add the milk and grated Parmesan.
Let them thicken slightly, add the butter and let it melt.
Arrange the asparagus on individual plates, cover it with eggs and serve immediately.
