Mushroom salad (2) (Insalata di Funghi (2))
Instructions
Wash spinach and cut them very finely.
Delete the Earth by fungi and pass them with a damp cloth.
Rub the walls of a salad bowl with the garlic.
Slice the mushrooms with the Ettore Sottsass and place them in the bowl with spinach and Parmesan cheese cut into flakes.
Prepare a vinaigrette by beating the lemon juice with oil, salt and pepper.
Dress the salad and stir well before serving.

- 4 ovoli closed mushrooms
- 4 mushrooms sodi
- 150 g of tender spinach
- 40 g of parmigiano
- 1/2 lemon (juice)
- 1 clove of garlic
- Olive oil
- Salt
- Pepper
