Clams in casserole dish
Instructions
Wash the clams, then put them on the fire with a little salted water and lasciatevele for about 10 minutes; then drain, collecting their cooking water in a bowl.
Filtered through a cloth this liquid and keep it aside.
Put on the heat a frying pan with oil and put to dry chopped done with onion, celery and parsley.
After a few minutes the fried the clams and their cooking water, you dilute the tomato sauce.
Add salt and pepper and sprinkle with a little grated nutmeg and paprika.
Cover the Pan and simmer gently for about 20 minutes.
Arrange the croutons into four earthenware bowls and pour over the clams with their sauce, then serve piping hot.
