Gratin of leeks

Carefully clean the leeks, discarding the most leathery green, which you can use to prepare a soup.
Then wash and boil for 5 minutes, drain them and dry them with a clean cloth before you cut them into rings 4-5 cm long.
Mince the shallots, then place it in a baking sheet with a little oil and leave it on a moderate flame until it becomes transparent.
At that point, remove the Pan from heat and use the base with the tomato sauce, sprinkle over the leeks.
Put the cream in a saucepan and bring to a boil, setting moderate focus so that it thickens, then add salt leeks, season with a pinch of hot pepper and nappate with cream, finally leaving in preheated oven for 15 minutes and serve piping hot.

- 1500 g of leeks
- 200 g of tomato sauce
- 33 cl of cream
- 1 shallot
- Little of olive oil extra virgin
- Salt
- 1 pinch of red chili powder
