Instructions

Wash away, wash the spinach and boil them.

Squeeze very well and pass through a sieve.

Combine spinach, ricotta and whole eggs and 2 egg yolk, 5 tablespoons of Parmesan, salt, pepper and nutmeg.

Mix well all the ingredients and add enough flour to make a soft dough but not mushy.

With floured hands, form small dumplings, then throw them in boiling salted water and cook for about 1 minute.

Toss with melted butter and Parmesan.
