Spinach gnocchi
Instructions
Boil spinach and squeeze well.
Pass them through a sieve and combine the ricotta, eggs, grated cheese, nutmeg, salt and pepper.
Add the flour and knead.
With your hands, remove the pieces of dough and form small dumplings.
Boil them and toss with butter and cheese, or with a simple sauce of tomato and Basil

- 500 g of frozen spinach
- 350 g of ricotta
- 100 g of parmigiano
- 200 g of flour
- 3 eggs
- Nutmeg
- Pepper
- Salt
