Acciughine of trebisacce
Instructions
Wash the tiny anchovies, whole naturally in sea water and let them drain and dry thoroughly on a trellis.
In a clay jar with a thin layer of salt rather up (as will melt completely) and sprinkle liberally with spicy Chili pounded in a mortar.
If you prefer, you can use most sweet chili chili pepper (half and half).
Take a thick layer of olive oil, then salt and chili and so on, up to the wooden disc and, for weight, circular stone.
After a couple months of seasoning, pour on the surface a finger of olive oil to prevent them from having contact with the air and keep in cold place.
