Green gnocchetti with wild mushrooms and arugula
Instructions
Prepare dumplings by combining the traditional mixture of potatoes and flour boiled spinach, passed through a sieve and squeezed very well.
Prepare the salsa doing hot oil fry the garlic and mushrooms cut into pieces.
When these are wilted add the white wine and let evaporate.
Join the tomatoes then cut into pieces and simmer for another 5 minutes.
Season with salt and pepper and add the gnocchi well drained.
Then stir the whole thing by adding fresh chopped Arugula and Parmesan.
